Really – the weather has been so warm that deep frying is the last thing I want to do. But as is often the case, I needed to work on some recipes, and these crispy, light onion rings needed to be made.
I don’t know why, but I’m often amazed at how easy it is to make some things. And how much better they are when you make them yourself than when you eat them in a restaurant or (in this case) get them at the drive-thru.
Simple, simple! All you need to do is season some flour – about 1 cup of flour, approx. 1 tsp of salt, 1 tsp. baking powder and in this case, some Ancho chili powder. Then I poured in enough beer, whisking as I added it, making the batter the right thickness. It can’t be too thick or too thin, because it won’t stick well. The finished batter should be just the right thickness, so that the onion rings that are dipped in, get a nice, even coating.
Into 350 degree oil – and fried until golden brown. Drained on a towel – and eaten right away with a sprinkling of vinegar (I’m Canadian!).
Delicious, crispy goodness.
