Really, it’s too hot to cook. But chicken in the fridge was demanding to be used, and though I love to crank up the BBQ, I wasn’t in the mood. And perhaps I’ve been grilling too much lately.
So instead I cranked the air-conditioner up, and opened the refrigerator door to see what was lurking inside. Surprisingly, lots of good stuff. A couple of chicken breasts and thighs that were boned, and cut into strips. Pea pods, red and green onion, cauliflower, crimini mushrooms, yellow and orange peppers and baby bok-choy. Lots of fresh ginger and garlic and a squeeze or two of lemon juice. From the pantry: toasted sesame oil, tamari, sweet chili sauce, brown sugar and some corn starch. I think there should have only been one squeeze of lemon juice rather than two – but overall, very tasty.
Served with some sushi/sticky rice, lightly salted.
It’s hot and I’m tired. But a good dinner overall.
